Spaghetti Pie

  • 6 oz. spaghetti
  • 2 Tbsp. butter or margarine
  • 2 eggs, beaten
  • 1/3 cup grated Parmesan cheese
  • 8-oz. container cream-style cottage cheese
  • 1 lb. ground beef
  • ½ cup chopped onion
  • ¼ cup chopped green pepper
  • 8-oz can diced tomatoes
  • 6-oz can tomato paste
  • 1 tsp. sugar
  • ½ tsp. dried oregano
  • ¼ tsp. garlic powder
  • Mozzarella cheese

Cook the spaghetti according to the package directions. Drain. Stir the butter or margarine into the hot spaghetti. Stir in the beaten eggs and Parmesan cheese. Form the spaghetti mixture into a crust in a greased 10-inch pie plate. Spread with cottage cheese.

In a skillet, cook the ground beef, onion, and green pepper until the meat is browned and the vegetables are tender. Drain off the fat. Stir in un-drained tomatoes, tomato paste, sugar, oregano, and garlic powder. Heat through.

Turn the mixture into the spaghetti crust. Bake uncovered for 20 minutes at 350ºF. Sprinkle with Mozzarella cheese. Bake until melted (about 5 minutes).

Serves 6.
