- 1 package yellow cake mix
- 1/3 cup softened margarine or butter
- 1 egg
- 3 cups miniature marshmallows
- 2/3 cup corn syrup
- 2 tsp. vanilla
- ¼ cup margarine or butter
- 12 oz. package peanut butter chips
- 2 cups Rice Krispies cereal
- 2 cups salted peanuts
Heat oven to 350ºF. In a large bowl, combine all of the base ingredients except the marshmallows. Mix at a low speed until crumbly. Press into the bottom of an un-greased 13×9 pan. Bake at 350ºF for 12 to 20 minutes, or until golden brown.
Remove from the oven. Sprinkle with marshmallows and return to oven for about 2 more minutes, until the marshmallows begin to puff up. Remove from oven again and set aside to cool.
While cooling, prepare the topping. In a large saucepan, heat the corn syrup, margarine/butter, vanilla, and peanut butter chips until the chips are melted and the mixture is smooth. Remove from the heat and stir in the cereal and nuts.
Immediately spoon the topping over the marshmallows in the pan. Spread to cover the entire cake mixture. Chill. After chilling, cut into bars.
Makes 36 bars.
