Double Chocolate Crumble Bars

  • ½ cup butter or margarine
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • ¾ cup flour
  • ½ cup chopped nuts (pecans or whatever your preference is)
  • 2 Tbsp. unsweetened cocoa powder
  • ¼ tsp. baking powder
  • 2 cups tiny marshmallows
  • 1 (6-0z) package semi-sweet chocolate chips
  • 1 cup peanut butter
  • 1½ cups Rice Krispies
  • ¼ tsp. salt

Cream the butter (or margarine) and sugar together. Beat in the eggs and vanilla. In a separate bowl, stir together the flour, chopped nuts, cocoa, baking powder and salt. Stir into the egg mixture.

Spread in the bottom of a greased baking pan (13x9x2). Bake at 350ºF for 15 to 20 minutes or until the bars test done. Sprinkle marshmallows evenly over the top and bake for about 3 more minutes.

Cool the bars. In a small saucepan, combine chocolate chips and peanut butter. Cook and stir over low heat until the chocolate is melted. Stir in Rice Krispies. Spread the mixture over the top of the cooled bars.

Chill in the refrigerator. Cut into bars. Refrigerate.

Makes 3 to 4 dozen bars.
