Crockpot Wild Rice Pilaf (low fat) 11/18/11

2 cups uncooked wild rice
1/2 cup finely chopped onion
1/2 tesapoon salt
1/8 teaspoon pepper
2 (14-ounce) cans chicken broth (you can use lower sodium)
1/2 cup water
2 (4-ounce) cans sliced mushrooms, undrained
1 teaspoon dried thyme leaves

Spay a 3-quart slow cooker with nonstick cooking spray.

Rinse rice and drain well.  Place in crockpot along with the other ingredients, mixing well.

Cover crockpot and cook on High 3-4 hours or Low 7-8 hours.  Yields 6 servings.
