Crispy Bacon Shrimp

  • 1 1/2 lbs. peeled and de-veined raw or thawed frozen medium shrimp
  • 3 minced garlic cloves
  • 1/4 cup chipped parsley
  • 1 tsp. crumbled basil
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1/2 cup olive oil
  • 3 Tbsp. lemon juice
  • 20 to 25 slices halved bacon

If shrimp are frozen, thaw on a paper towel to absorb the moisture.

Combine all ingredients except the bacon and shrimp. When the shrimp are defrosted, pour the mixture over the shrimp. Let the shrimp marinate in the mixture in the refrigerator for several hours.

Drain the shrimp after marinating. Wrap each shrimp in bacon and secure with a toothpick. Broil until shrimp are pink and the bacon is crisp.
