Cranberry Meatballs

Meatballs:

  • 2 lbs. ground turkey (mixed with ground round)
  • 1 cup crushed cornflakes
  • ¼ cup parsley
  • 2 eggs
  • 2 Tbsp. soy sauce
  • ¼ tsp. pepper
  • ½ tsp. garlic powder
  • 2 Tbsp. instant minced onion
  • 1/3 cup ketchup

Sauce:

  • 1 lb. fresh cranberries or 1 can cranberry sauce
  • 1 (12-oz) bottle chili sauce
  • 2 Tbsp. brown sugar
  • 1 Tbsp. lemon juice

Preheat the oven to 350ºF.

While the oven is preheating, combine all of the ingredients for the Meatballs (meat, cornflakes, parsley, eggs, soy sauce, pepper, garlic powder, minced onion and ketchup). Shape the mixture into balls. Put the balls into a baking pan.

Cook the cranberries, chili sauce, brown sugar, and lemon juice until the mixture is smooth. Pour the sauce over the meatballs. Bake uncovered for 35 to 45 minutes.
