- 2/3 cups raisins
- 2 cups coarsely grated carrots
- 1 cup crushed pineapple, drained
- 1/3 cup mayonnaise
- 1 Tbsp. lemon juice
- 1/4 tsp. salt
- 1 Tbsp. sugar
Toss raisins, carrots, and pineapple together. Set aside.
Stir together the mayonaise, lemon juice, salt, and sugar. Add to the rest of the carrot and raisin mixture.
Refrigerate until served.
Makes 4-6 servings.
