BISQUICK DIABETIC IMPOSSIBLE COCONUT PIE 10/27/09
1/2 cup Bisquick Original Baking Mix
2 cups milk
1 cup flaked or shredded coconut, unsweetened
3/4 cup Splenda
1/4 cup butter or margarine
1 1/2 teaspoons vanilla extract
4 eggs
Preheat oven to 350 degrees. Grease a 9-inch pie plate.
Stir all ingredients until well blended. Pour into pie plate.
Bake 50-55 minutes or until golden brown and knife inserted in center comes out clean. Cover and refrigerate any remaining pie. Yields 8 servings. Per serving: Calories 270 Total Fat 14 g Total Carbs 31 Diabetic Exchanges: 2 starch, 2 1/2 fat. |
